Coolers and Prep Tables are crucial for restaurants because of ease of getting to products without loosing time going back to the main walk-ins. Prep tables have what is called a cutting board installed on the front. This is mainly for pizza prep tables or sandwich prep tables. These types of coolers store all the condiments on the top and either a single door or multiple doors on the bottom to store cheese, meats, dressings, tomato’s, lettuce etc. The top rail is either a low temperature or an air-cooled medium temperature top. The bottom is an air-cooled coil with either an expansion valve or cap tubing to meter freon. Both the prep tables and reach-in coolers or freezers have to be cleaned and serviced on a bi-monthly basis for proper operation.
